Volume-to-weight conversion is the part worth understanding, because a cup measures space rather than mass. A cup of flour can vary by 20 percent or more depending on whether it was scooped or spooned and levelled, which is enough to change a dough noticeably — this is why baking recipes increasingly specify grams. Note also that a US cup is about 237 ml while a metric cup is 250 ml, and UK and Australian tablespoons differ from the US one. Scaling is not always linear either: doubling a cake batter rarely means doubling the bake time, since pan depth changes how heat reaches the centre, and strongly flavoured ingredients such as salt, spice, and leavening often need less than a straight multiple. Always follow published food-safety temperatures for meat and poultry rather than scaling a cooking time.
