Scaling ingredient amounts
Recipe scaling multiplies every ingredient by the same ratio: target servings ÷ original servings. If a recipe serves 4 and you need 6, the scale factor is 1.5 — every ingredient amount gets multiplied by 1.5, from the flour to a pinch of salt.
This works cleanly for most measured ingredients, but leavening (baking soda, baking powder, yeast) and spices do not always scale linearly — very large batches may need slightly less leavening per unit, and strong spices may need tasting adjustments. Pan size and bake time also change with volume and are not covered by simple scaling.
Example: a recipe serving 4 uses 2 cups of flour. Scaling to 6 servings gives a multiplier of 1.5 (6 ÷ 4), so you need 3 cups of flour (2 × 1.5). Scaling down to 2 servings uses a 0.5 multiplier for 1 cup.
Scale time separately — doubling a cake volume may need lower temperature and longer bake, not 2× minutes.
Strong spices and salt sometimes scale sub-linearly — taste after scaling rather than blindly multiplying pinches.
Worked example: 4→6 servings, 2 cups flour → 3 cups (×1.5).
Sheet cakes baked in a 9×13 pan do not automatically fit a doubled recipe meant for two 8-inch rounds — surface area scales differently from volume. After scaling ingredients from 4 to 6 servings (×1.5), confirm pan capacity before pouring batter. Bundt and sheet pans differ in volume from two 8-inch rounds — confirm pan capacity after the 4→6 serving ×1.5 multiplier before baking.
Professional kitchens scale by weight rather than volume because flour compaction varies cup to cup. Once you know the multiplier is 1.5, weigh 375 g flour instead of trusting 3 scooped cups converted from 2 cups by ratio alone. Scaling down from 4 to 2 servings halves every amount: 2 cups flour → 1 cup, 4 eggs → 2 eggs. Fractional eggs in small batches mean beating one egg and using half the volume — the calculator gives the ratio; you apply judgment on indivisible ingredients. Halving 4→2 servings splits indivisible eggs — beat one egg and use half the volume when the calculator returns fractional counts.
Common questions
Does this work for baking recipes?
Yes for most measured ingredients, but leavening agents and pan size do not always scale linearly. Large batches of yeasted dough may need slightly less yeast per cup of flour — taste and texture are the final check.
Can I scale down to a single serving?
Yes — enter a target of 1 (or any number) below the original. The multiplier and scaled amount work the same in both directions.
Do I need to run this once per ingredient?
Yes, run the amount field once per ingredient in your recipe (or multiply each amount yourself by the multiplier shown, which stays the same for every ingredient in that recipe).
